Sheet-Pan Root Vegetable & Eggs

Ingredients

4 spray(s) cooking spray

1 pound(s) sweet potatoes cut into ½-inch pieces (about 3½ cups)

1 pound chopped cubed parsnip(s)

12 oz carrots peeled and cut into 1/2-inch pieces (about 3 cups)

1 large red onion cut into wedges

2 Tbsp canola oil - divided

1 1/4 tsp kosher salt

1 tsp black pepper

1/2 tsp garlic powder

8 eggs

1/2 tsp ground cumin

1/2 tsp smoked paprika

Directions

Arrange racks in the upper and lower thirds of the oven. Place 1 large sheet pan on each rack. Preheat the oven to 400°F.

Roast Veggies, add any damn spice you want.

Cook eggs sunny side up
